Obesity~ I have officially left your life, and will never see you again! I weighed in today to find I'd lost some weight, and moved out of the obese spectrum to the overweight spectrum. Yay me! These are the goals along the way that definitely keep me going, and make it all worth it.
I'm so happy lately. I just feel like things are finally falling into place, not only for me but people I care about as well. There was an early scare in the new year with a friend, but God is good and things are looking okay right now. I am so blessed with the people in my life right now. I have such wonderful friends and just feel very lucky and blessed.
Yesterday was Larr's Bday. We had a nice day here. My sisters were here, along with our nieces and nephews to celebrate. I made pulled BBQ chicken sandwiches on ciabatta rolls, and mac n cheese, cake and we had ice cream. I think I could sell those sandwiches too. Open a cart or something. The sauce is so yummy and the ciabatta rolls are to die for! We had them twice in a matter of 4 days they're so good! lol They're definitely not on my diet, but I really didn't care too much either. =)
Tonight for dinner I'm making loaded baked potato soup. Definitely not on my list. I'm thawing a chicken breast for myself. It's sure going to be hard sitting next to everyone eating their soup with my chicken breast, but I can do it! I bought things to help me out like brown rice over white. Whole wheat pasta over bleached. Still watching portion sizes, and just what I'm eating and logging it all.
I've also decided I'm NOT a runner. I can do short sprints, or jog a block here and there, but long distance running is never going to be my thing. I don't think I could come anywhere near a 5K let alone the half-marathon I thought I would train for this year. lol Yeah, I'd be better off training for the 60 mile 3 day Breast Cancer walk. I'm going to start looking at adding some 10K's to our list of 5K's we're doing this year.
There are 3 heads of cauliflower out in the garden. I think I'm going to pull one tonight for my dinner. I'll steam some and put some raw in my salad. It's got such good flavor too. We've had them twice now.
We booked our flight to New York in September! I'm going to see New York!! I'm going to experience what so many people dream of! I'm going to climb the stairs of the Statue of Liberty. I'm going to the Empire State Building, The Metropolitan Museum, Times Square, you name it, I'm going to make every effort to see it! Just imagine ALL the pictures I will be taking! From there we are going to Howes Caverns up near Albany. Then we will head over to do some research on family history and to see some of the graveyards. From there we head to Niagara Falls! We'll be staying in Canada a couple of nights, and fly out of Buffalo on day #9!! So much to look forward to!
